Jam Thumbprint Cookies
We think these Jam Thumbprint cookies are just the cutest thing! This buttery cookie contains ground almonds and strawberry jam for a little Christmas color (raspberry jam would have also been delicious but we did not have any on hand today). Today's recipe is from "Freeding the Whole Family" by Cynthia Lair.
1/2 cup almonds
1 cup whole wheat pastry flour
1 tsp. baking powder
2 tsp. lemon zest (use microplaner)
1/4 tsp. sea salt
5 Tbsp. unsalted butter, melted
1/4 cup maple syrup
1/4 tsp. almond extract
1/2 tsp. lemon extract (we left this out)
Preheat oven to 350F.
Grind almonds into a powder in a blender or small grinder (we used the Cuisinart)
Combine almond meal, flour, baking powder, zest, and salt in a mixing bowl; set aside.
Melt butter and whisk in syrup and extracts.
Add wet ingredients to dry and mix well.
Form dough int o 1 inch balls and flatten slightly to make discs (we made ours a little smaller). Place on a cookie sheet lined with parchment paper.
Indent each cookie with your thumb and put 1/2 tsp. jam in the imprint.
Bake 15 minutes, until edges turn golden.
Preparation time: 30 minutes
Makes 12 larger cookies or about 20 smaller ones.
