Butter Pecan Turtle Bars
Julie's been making these amazing Butter Pecan Turtle Bars for years. The combination of caramel, pecans, anc chocolate is hard to resist! This recipe comes from the Creme de Colorado Cookbook (1987) and was given to Julie by a friend when she was first married. They are good at Christmastime or anytime!
2 cups flour
3/4 cup light brown sugar
1/2 cup butter, softened
1 1/2 dups pecan halves
1/2 cup light brown sugar
2/3 cup butter
1 1/2 cups milk chocolate chips (I usually use 2 cups, and often use regular semi sweet chocolate chips)
Combine flour, 3/4 cup brown sugar, and 1/2 cup butter, Blend until crumbly (I use a pastry blender). Pat firmly (but not too hard) onto bottom of ungreased 9x13 pan. Sprinkle pecan halves over unbaked crust. Set aside.
In a small saucepan, combine 1/2 cup brown sugar and 2/3 cup butter. Cook over medium heat, stirring contantly, until mixture begins to boil. Boil for one minute, stirring contantly (mixture will get foamy and light colored). Drizzle this caramel mixture over pecans and crust. Bake at 350F for 18-20 minutes or until caramel layer is bubbly and crust is light brown. Remove from oven and immediately sprinkle with chocolate chips. Spread chips evenly as they melt. Cool completely before cutting (makes 48 bars).
