Nanaimo Bars

Nanaimo Bars

These rich Nanaimo Bars are a Christmas favorite from my childhood. The recipe came from my Aunt Bette, who is 90 years old and still making these each year for friends and family. 

Ingredients:

1 cup plus 1 Tbsp. butter, divided

1/4 cup sugar

1 square unsweetened chocolate

1 egg, beaten

2 cups graham cracker crumbs

1/4 cup nuts

1 cup coconut

1 tsp. vanilla

2 Tbsp. instant vanilla pudding mix

3 Tbsp. milk

2 cups powdered sugar

4 squares semi-sweet chocolate

Directions:

Place 1/2 cup butter, sugar, and unsweetened chocolate in double boiler top and cook until well blended. Add egg and cook 5 minutes longer, stirring. Add crumbs, nuts, coconut and vanilla.

Press in bottom of 9 inch square pan. Cool 15 minutes. Cream 1/2 cup butter until fluffy. Beat in pudding mix and milk. Add powdered sugar gradually, beating until smooth.Spread over first layer. Chill 15 minutes.

Melt semi-sweet chocolate with remaining 1 Tbsp. butter, spread over 2nd layer and chill until firm. 

Cut into squares before completely hardened. Keep refrigerated.
