Chocolate Mint Cookies
These cookies combine two of my favorite flavors-mint and chocolate! With the sprinkling of powdered sugar, they are a Christmas Cookie natural. This batch could have used more powdered sugar in my opinion.
1 package (10 ounces) mint chocolate chips, divided
6 Tbsp. butter, softened
1 cup sugar
1-1/2 tsp. vanilla
1-1/2 cups flour
1-1/2 tsp. baking powder
1/4 tsp. salt
In a microwave, melt 1 cup chocolate chips; stir until smooth and set aside to cool.
In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in the melted chocolate chips and vanilla. Combine flour, baking powder, and salt; gradually add to the creamed mixture and mix well. Stir in the remaining chocolate chips. Cover and refrigerate for 2 hours or until easy to handle.
Roll in 1-inch balls, then roll in powdered sugar. Place 2 inches apart on ungreased cookie sheets. Bake at 350F for 10-12 minutes or until edges are set and centers are almost set. Cool for 10 minutes before removing to wire racks. Yield: 4 dozen.
